- Kosher Salt - Now Do not get me wrong. Definitely not a religious debate, in fact, has nothing to do with it. However I have a friend who makes good use kosher ingredients, and I have tried salt with my meat. I was shocked! Instead of simply irresistible taste of salt really helps to emphasize the taste of meat. You can try and you will not be disappointed.
- Black / Red Pepper - OK, know what kind of crept into two components, but I think everyone is certainly important for a tasty, mild pepper BBQ. Having you almost every grill is certainly a way. As you undoubtedly use a combination of sweet and bitter components, pepper helps bring serious tasty hot and spicy.
- Garlic Powders - Absolutely one of my favorite ingredients, garlic powder. There is not a day goes under the grill with me using this puppy. It contributes to pleasant sweetness with some heat, and balancing other spicy flavors.
- Paprika, this ingredient is absolute gold at any time to create an easy recipe on the grill. It's just so versatile. He has a beautiful color, it adds something to the meat, and just as nice flavor.Well football, this is so. Choosing A Quality Cookware Set
The first factor to be considered is the material in which the cookware is made. The first option is the stainless steel that is most popular, durable and convenient. Healthy Oils: The key to make flavorful oils for a simply elegant and heart-healthy meal is to add herbs and spices, such as basil, garlic, salt and pepper, to olive oil over a low heat on the stove, similar to making tea. This allows you to adjust the intensity of the flavor. After heating the olive oil, strain the mixture and remove the herbs and spices. Grilling Hamburgers and Sittin' on an Old Ice Cream Freezer
Today, the hoodless grill would resemble a throw away variety you would take to the beach, but then we were in tall cottons and in for some delicious eating. The ice creams would be flavored usually with a can of crushed pineapple. Or, just maybe, someone would have given us some fresh ripe peaches to mash and toss into the vanilla ice cream mixture.
Cooking out then was really big treat for the entire family, always with a lot of laughter, running and playing.
Grilling the hamburgers soon became my responsibility, even though I was only about 10 years old at the time. Carefully building the charcoal fire in that old grill we had was a test of my better Boy Scout skills. Once the charcoal was covered in a fine white ash the grilling could begin.
The ice creams was being packed in more ice mixed with a generous amount of rock salt mixture to be allowed to season, while we all ate our terrific tasting hamburgers always topped with lettuce, red ripe tomatoes and onions. The catsup bottles would be passed around as everyone would take their turn, shaking or popping the bottom of the bottle to get the thick tomato sauce from the jar.
Ribs today are one of my favorite backyard treats, but the hamburgers still to this day come sliding across the plate for a delicious grilling feast.
Ah the ribs, good tender slab of ribs with the meat falling off the bone, slathered with a generous portion of smoky chipotle barbecue sauce. Just enough heat in the sauce to add a nice warm blanket right on top of your tongue. Did you know the chipotle is nothing more than the Jalapeno smoked and dried usually with mesquite wood
Guacamole
Thick juicy T-Bone steaks are a great treat as well as chicken fajitas. Fun to do because everyone gets to pile their own into a large flour tortilla made just to suit them.
Yes grilling today is just as much fun today as it was when I was growing up. The old three legged grill has long since been tossed onto the trash heap. Replace with a big cast iron wood smoker and grill, sure I have a handy gas grill for almost daily use but nothing is better than firing up the old trusty smoker.
My great nieces and nephews are now the ones running and playing. They are always beaming with delight as the scoops of homemade fresh peach ice cream is served up with one of "Nana's" homemade cookies.
Someday though I think I will pull out the old hand cranked ice cream freezer. After all, they are missing one best part of the family cookout. Sitting on the old freezer, holding it down while their Dad, Uncle and Granddad take turns cranking the old beast.
I wonder if they would sit still that long?

Onions, Fabulous, Superb Perfection
Onion are absolutely one of the most delicious and flexible commodities you use in the kitchen. From savory steaming soups to satisfying homemade salsa, onions play an important part in our daily cooking.
Buying onions are a simple task. Look for dry, papery skins with no soft spots. You should also notice the absence of any strong odor. A good dry onion will have very little to no smell to it at all. If it has a strong onion odor the onion has already began to turn bad.
Varieties of onion include, Vidalia, Texas 1015, Red, Green, the Walla Walla from Washington and Maui from Hawaii. Sweet onions such as Vidalia and Walla Walla are mellow enough to eat raw, but they are excellent "baked" on the grill and served with grilled steaks or burgers. Try them in the oven too.
Capt'n Salsa has an almost comical way of storing onions, but it really works.
Grab an old pair of your wife's panty hose, cut off the legs. Now you simply drop an onion down into the leg of the hose and tie a knot directly above the onion. Repeat this process until each onion is secured and hang the hose in a cool dry, well ventilated space, out of direct sunlight.
To remove the onion, simply cut the hose with a pair of scissors right below the knot and the onion easily falls out. You should be able to keep your onions for about three months.
Kosher salt is one best thing to use to remove the smell of the onion from your hands. Wash your hands using a little dish washing soap, water and about a teaspoon full of salt. Any salt will do, I just like the course texture of the kosher salt. Rinse your hands and repeat if necessary.
Tears when you chop those onions?
How do you get rid of the tears? Here are a few simple suggestions to ease your pain.
You can place the onion in the refrigerator for about thirty minutes before chopping or if you are in a hurry toss them in the freezer for about four to five minutes. The cold wills tone down the sulfur compound in the juice of the onion. In addition be sure to use the sharpest knife possible to expedite your chopping chores.

North America Gets Cheesy with Raclette Grills
Yes, the fondue pot of the 70's was pretty cheesy, but in this century, nothing is more cheesy than raclette. In recent years fondue pots have experienced resurgence in popularity, and with them has come the raclette grill. Though not traditionally well known in the US and Canada, raclette is suddenly experiencing a boom in popularity.
Legend has it that the original method for melting the raclette cheese began when Swiss herdsmen settled down for the night in their camps. They placed a hunk of cheese near their campfire and as it melted, scraped it off onto a slice of bread.
Today, this same meal is mimicked but with much greater variety of foods, and with electric raclette grills that are much more convenient. Though the melting method has changed over the years, this simple and entertaining meal has remained just as enjoyable for entertaining evenings with friends and family.
There are several kinds of raclette grills that you can choose from. Traditional raclette grills hold a half- or quarter round of raclette cheese on an angle, with a heating element melting the surface of the cheese, which drips onto a plate of dried meats and other accompaniments.
Today, the most common raclette sets include a cheese-melting element with a grill for cooking meats at the table. They provide up to 8 people with individual cheese pans and feature non-stick, dishwasher safe surfaces for convenience and easy cleanup. Perfect for entertaining!
Portable raclette using fondue-type burners are also available for camping and picnicking.
A raclette grill can provide not only a delicious, hot-off-the-grill meal, but also provide a lot of fun for family and friends. For best enjoyment, serve traditional raclette with a Fendant or other light-bodied dry white wine. If you are grilling meats, serve a wine appropriate for the meats.
A traditional Swiss raclette meal uses raclette cheese with the following accompaniments:

Raw meat for grilling and dipping into sauces:
- Italian sausage cut into 1/4 slices
- Chicken tenderloins cut into 1 pieces
- Beef tenderloin cut into 1/2 cubes
- Shrimp and Scallops
Thinly sliced cheeses:
- Brie
- Camembert
- Oka
- Cheddar
- Cambezola
Vegetables, blanched to al-dente, such as:
- Mushrooms
- Broccoli
- Cauliflower
- Asparagus
Here are two excellent recipes for dipping sauces for your meats and vegetables:
Pimento Sauce
3/4 cups mayonnaise
1/4 cup sour cream
2 tablespoons tomato sauce
1/2 cup canned pimentos or 1 red bell pepper, roasted with skin removed
Salt and pepper, to taste
Blend all ingredients in a blender. Season to taste. Serve chilled.
Cucumber Garlic Sauces
1/2 cup mayonnaise
1/2 cup plain yogurt
1/2 cup sour cream
2 gloves of garlic, finely chopped
1/2 teaspoon salt
1/4 cucumber, peeled and finely chopped
1 tablespoon of finely chopped chives or green onion
1 teaspoon finely chopped parsley
1 tablespoon granulated sugar
fresh ground pepper
Mix well all ingredients. Serve chilled.

Incredible Pan Sauces Tips
If you want to elevate your cooking skills to a new level and add a whole lot that more to your gastronomy repertoire, learn how to make a simple pan sauce. With this technique in your cooking bag of tricks, you can turn a simple pan-fried steak into a mouth-watering meal, a plain boneless chicken breast into a delicious feast, or a modest pork chop into a scrumptious banquet. Ok, maybe I'm stretching a bit but check this out.
The "stuff" has a name, it's called "fond" and you want that "fond" stuck to your pan because it is packed with incredible flavors. It's also easy to remove by adding a little liquid to the pan and using a wooden spoon to dissolve it. This is called deglazing and can be done with wine, brandy, fortified wines, stock, cider, fruit juices or most typically a combination of two. Just be careful if you use wine to remove the pan from the heat so the alcohol doesn't ignite and blow up in your face. I've spoken with chefs who have seen this happen.
The next steps are to continue to cook the liquid in the pan until half reduced it and finish by adding several pats of butter to thicken and enhance the flavor of the sauce. If you ever knew how much butter professional chefs use in restaurants to "enhance" flavor, you would be amazed. I sometimes think that they make their dishes too rich because I get that uncomfortable "too full" feeling later on, but then again, it's so good while you're dining. Now those are just the basics.
To create more complexity to the sauce you'll want to add some aromatics like garlic or shallots for a subtle but additional layer of flavor. Then you might want to add some additional ingredients such as mushrooms, mustards, chutneys, herbs and/or spices to give even more complexity and flavor.

My Favorite Grilled Cheese Sandwich
I seem to spend my time wondering about the conundrums of this world. Like why do they call them "Grilled Cheese Sandwiches" when they're not grilled. They're fried - on top of the stove - with lots of butter. So I decided to find out what would happen if I really grilled my cheese sandwich. And what a difference that made. A sandwich so smooth, with all the flavors caressing one another. And none of that greasy fried butter taste.
After creating many variations of real grilled cheese sandwiches, I have found my favorite recipe. A sandwich so yummy and bold it satisfies the most disparaging palate. Try this one out the next time your mouth craves comfort food. It's sure to fill the bill.
Prep Time - 30 minutes, Grill Temp - Medium Low, Serves 4
Ingredients:
8 slices thickly cut pumpernickle/rye bread
12 ounces pastrami, thinly sliced
8 ounces of your favorite swiss cheese, sliced medium
2 large, sweet onion, finely sliced
1 can of rinsed and well-drained sauerkraut
1/2 teaspoon caraway seeds
1 Tablespoon dark brown sugar
1 Tablespoon basalmic vinegar
1/2 cup water
2 teaspoons kosher salt
Dipping quality olive oil
4 half-sour pickles
Your favorite mustard
1. Saute your onions in about 3 tablespoons of olive oil. Sprinkle with kosher salt and sweat the onions until carmelized. Set aside until you assemble the sandwiches.
2. Rinse and drain the sauerkraut. Add the caraway seeds, brown sugar and basalmic vinegar along with the water. Simmer until the flavors are well blended and the liquid has been reduced to almost nothing.
3. Assemble the sandwich as follows:
4. Cook the sandwich on your favorite barbeque grill, starting on the side with the swiss cheese and turning once to finish both sides with grill marks.
5. Cut each sandwich in half. Serve with a dollop of mustard and a half-sour pickle. Yummy!
